The Best Thing to Do with Leftover Tofurkey: Tofurkey Sloppy Joes

Seriously, make this now.

Yesterday, I explained how much I dislike wasting food. I had also previously admitted to not being a huge fan of the Thanksgiving tofurkey. So what is a girl to do when she has half of a tofurkey sitting in her fridge? Tofurkey sloppy joes!

Tofurkey Sloppy Joes
About 2 cups of tofurkey, diced
1/2 onion, diced
1/3 cup ketchup
1/3 cup barbeque sauce
1.5 tsp dijon mustard
1 tsp garlic powder
1 tbsp olive oil
salt & pepper

Cook the tofurkey and onion in 1 tbsp olive oil over medium heat in a large pan for 3-4 minutes. Add the ketchup, barbeque sauce, mustard, garlic powder, and salt & pepper to taste. Turn down heat and let cook for about 6-8 minutes or until the mixture is at desired consistency.

I had mine on a toasted whole wheat hamburger bun with some spinach.

Confession- I even went back for more. After finishing my sandwich, I put a small bed of spinach on my plate and loaded up with more sloppy joe mix (I was sooo hungry for dinner today!).

You may wonder what Ian ate for dinner tonight and the answer is a Kobe beef burger (courtesy of the frozen isle at TJS), I don’t think I could ever get him to eat tofurkey!

Dessert tonight was a tiny sliver of each of the pumpkin pie and the apple pie with a little bit of reddi-whip.

As for the pie update, they are almost completely gone!

  1. My husband loves sloppy joes…we haven’t had them since I became vegetarian so…in almost 5 years? I am also not a Tofurkey fan though, so I don’t have any leftover!! You’ve got me thinking I need to make sloppy joes for him now though.

    • Yeah, I hadn’t had sloppy joes in forever either. They’re not exactly vegetarian-friendly :P. I made some a couple of months ago using another bloggers tempeh sloppy joe recipe that reminded me just how good they are!
